Potatoes & Frying
Prepare the potatoes: peel and cut russets into very thin (about 1/8"–1/4") shoestring matchsticks. Aim for uniform size so they cook evenly.
Dry thoroughly: drain the potatoes and spread them on clean kitchen towels or paper towels. Pat completely dry — any residual moisture will cause oil splatter and sogginess.
Heat oil: in a deep heavy pot or deep fryer, heat vegetable oil to 325°F (163°C) for the first fry. Use a thermometer to maintain temperature. Fill the pot no more than half full with oil.
First fry (blanch): working in small batches (to avoid crowding), fry the potatoes for 3–4 minutes until tender and pale golden but not browned. Remove with a slotted spoon or spider and drain on a wire rack or paper towels. Let rest 10 minutes.
Increase oil temperature: raise the oil temperature to 375–380°F (190–193°C) for the second fry.
Second fry (crisping): return the blanched potatoes to the hot oil in small batches and fry until deep golden and crisp, about 2–3 minutes. Drain on a wire rack or paper towels and immediately sprinkle with the fine sea salt while hot.
Truffle Seasoning & Finish
Melt butter and combine truffle flavors
While the fries are finishing, melt the unsalted butter in a small saucepan over low heat or in the microwave until just melted. Whisk in the white truffle oil and, if using, the black truffle paste until smooth and emulsified. Keep warm but do not boil.
Toss fries with truffle butter: place the hot, drained fries in a large bowl. Pour the warm truffle butter mixture evenly over the fries and toss gently but thoroughly so the fries are lightly coated. Work quickly while fries are hot so they absorb the aroma.
Add cheese and seasoning: immediately sprinkle the grated Parmesan over the tossed fries, followed by freshly ground black pepper and the lemon zest (if using). Toss lightly so the cheese melts slightly and adheres to the fries.
Finish and garnish: transfer the truffled fries to a serving dish. Sprinkle the finely snipped chives on top and add microgreens or baby arugula if desired for color and peppery contrast.
Serve right away: these fries are best enjoyed immediately while hot and crispy to retain the truffle aroma and texture.
