In a large mash tun, combine the malted barley with 20 liters of hot water (around 65°C). Stir the mixture well and let it rest for about 60 minutes to allow the enzymes to convert starches into fermentable sugars.

Prepare the Mash

After mashing, drain the liquid (wort) from the mash tun and rinse the grains with additional hot water (around 75°C) to extract as much sugar as possible. Collect the wort in a kettle.

Sparging

Bring the collected wort to a boil. Once boiling, add the hops and boil for 60 minutes. Adjust the timing of hop additions for desired bitterness and aroma.

Boiling the Wort

After boiling, quickly cool the wort to about 20°C using a wort chiller or an ice bath to prevent contamination.

Cooling the Wort

Transfer the cooled wort to a fermentation vessel and pitch the yeast. Seal the vessel with an airlock and let it ferment at room temperature for about 1-2 weeks, or until fermentation is complete.

Fermentation

Once fermentation is complete, dissolve the priming sugar in a small amount of water and add it to the beer. Bottle the beer in sanitized bottles, leaving some headspace at the top.

Bottling

Cap the bottles and let them carbonate at room temperature for about 1-2 weeks. After carbonation, refrigerate the bottles before serving.

Carbonation

If you wish to add additional flavorings, such as spices or fruits, do so in the secondary fermentation stage or in the bottles before capping.

Flavoring (Optional)

Once chilled, your draft beer is ready to be served. Pour into a glass and enjoy your homemade brew!
