Method
Cupcake Batter
Preheat the Oven
Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
Add Eggs and Vanilla
Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
Combine with Dry Ingredients
Gradually add the dry mixture to the wet mixture, alternating with the Prosecco, starting and ending with the dry ingredients. Mix until just combined.
Fill Cupcake Liners
Spoon the batter into the prepared cupcake liners, filling them about 2/3 full.
Bake
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Cool
Remove from the oven and let the cupcakes cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Prosecco Frosting
Beat Butter
In a mixing bowl, beat the softened butter until creamy.
Add Powdered Sugar
Gradually add the powdered sugar, beating until well combined and fluffy.
Incorporate Prosecco and Vanilla
Add the Prosecco and vanilla extract, then beat until the frosting is smooth and spreadable.
Frost Cupcakes
Once the cupcakes are completely cooled, use a piping bag or a knife to frost each cupcake generously with the Prosecco frosting.
Garnish
Add Glitter and Raspberries
Sprinkle edible glitter on top of the frosted cupcakes and place a fresh raspberry on each cupcake for decoration.
