This Killer IPA earns its title by being brewed with six different hops to create an aggressive yet exceptionally well-balanced beer. Look for notes of pine and grapefruit balanced by caramelized malt.

Start by heating 3 gallons of water to 165°F (74°C). Add the Pale Malt, Caramel Malt, and Crystal Malt to the heated water in a mash tun. Stir well and maintain the temperature at around 152°F (67°C) for 60 minutes to convert the starches into sugars.

Mashing

After the mash has completed, sparge with an additional 2 gallons of water at 170°F (77°C) to rinse the grains and extract the sugars. Collect the wort in the brew kettle.

Sparging

Bring the wort to a boil and add the Amarillo Hops. Boil for 60 minutes, adding the remaining hops (Simcoe, Centennial, Citra, Chinook, and Cascade) at intervals: Simcoe at 15 minutes, Centennial at 10 minutes, Citra at 5 minutes, Chinook at flameout, and Cascade in the last minute.

Boil the Wort

After the boiling process, cool the wort as quickly as possible using a wort chiller or an ice bath until it reaches about 70°F (21°C).

Transfer the cooled wort to a sanitized fermentation vessel and pitch the American Ale Yeast. Seal the vessel with an airlock and let it ferment at around 68°F (20°C) for 1-2 weeks.

Fermentation

Once fermentation is complete, prepare a priming solution with 3/4 cup of corn sugar dissolved in 2 cups of water. Boil for 5 minutes, cool, and add to the beer before bottling. Bottle the beer using sanitized bottles and caps. Allow the bottles to carbonate for 1-2 weeks at room temperature.

Bottle the Beer
