In a large mash tun, heat 5 gallons of filtered water to 165°F. Add the pale malt and crystal malt, stirring to ensure all grains are saturated. Maintain a temperature of 150°F for 60 minutes.

Step 1: Prepare the Mash

After the mash has completed, sparge the grains with hot water (approximately 170°F) until you collect 6.5 gallons of wort in your brew kettle.

Step 2: Sparging

Bring the wort to a rolling boil. Once boiling, add the Cascade hops and boil for 60 minutes. After 45 minutes, add the Centennial hops, and after 55 minutes, add the Chinook hops.

Step 3: Boiling the Wort

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F.

Step 4: Cooling the Wort

Transfer the cooled wort to a sanitized fermenter. Pitch the American Ale yeast and seal the fermenter with an airlock. Allow it to ferment at 68-72°F for about 1-2 weeks.

Step 5: Fermentation

Once fermentation is complete, dissolve 3 tablespoons of corn sugar in 2 cups of boiling water. Add this priming solution to your bottling bucket, then transfer the beer from the fermenter to the bottling bucket, ensuring to mix gently.

Step 6: Bottling

Fill sanitized bottles with the beer, leaving about an inch of headspace. Cap the bottles and allow them to carbonate at room temperature for 1-2 weeks.

Step 7: Bottling the Beer

After carbonation is complete, chill the bottles in the fridge and enjoy your homemade Sierra Nevada Celebration beer!
