Begin by heating 100 liters of water to approximately 65°C. Add in the 15 kg of barley malt and 5 kg of corn. Allow the mixture to mash for about 60 minutes, maintaining the temperature.

Mashing

After mashing, drain the liquid, known as wort, from the mash. Rinse the grains with hot water to extract as much sugar as possible.

Lautering

Transfer the wort to a kettle and bring it to a boil. Add 300 g of hops to the boiling wort. Boil for 60 minutes.

Boiling

After boiling, rapidly cool the wort down to 1°C using a heat exchanger or ice bath. This step is crucial for achieving the crisp, refreshing taste.

Cooling

Transfer the cooled wort to a fermentation vessel and pitch in 1 kg of yeast. Seal the vessel and allow it to ferment for about 7-10 days at a controlled temperature.

Fermentation

After fermentation, lower the temperature of the beer to -1°C for lagering. Hold it at this temperature for at least 2 weeks to develop flavor and enhance crispness.

Lagering

Once lagering is complete, filter the beer to remove any sediment. Package the beer in bottles or kegs, ensuring it is stored at cool temperatures.
