In a large mash tun, combine the pale malt and caramel malt with 20 liters of filtered water at 65°C. Stir well and let it rest for 60 minutes to allow the grains to convert their starches into sugars.

Mashing the Grains

After mashing, sparge the grains by rinsing them with additional hot water (around 75°C) to extract as much sugar as possible. Collect the wort in a kettle.

Sparging

Bring the collected wort to a boil. Once boiling, add 50 g of Saaz hops and boil for 60 minutes. After 30 minutes, add 30 g of Hallertau hops.

Boiling the Wort

After the boiling process, cool the wort quickly to around 18°C using a wort chiller. Transfer the cooled wort to a fermentation vessel and pitch the lager yeast. Seal the vessel and let it ferment at a temperature of around 10°C for 2 weeks.

Cooling and Fermenting

After fermentation is complete, dissolve 150 g of corn sugar in a small amount of boiling water. Add this solution to the fermentation vessel, stir gently, and transfer the beer into sanitized bottles, leaving some headspace. Cap the bottles and let them carbonate at room temperature for 1-2 weeks.

Priming and Bottling

After carbonation is complete, chill the bottles in the fridge. Serve cold in a glass and enjoy the crisp, clean, and fruity notes of your homemade Harp Lager!
