Brewing Process
1. Mashing
In a large brew kettle, heat 5 gallons of water to approximately 165°F (74°C). Add the wheat malt, pale malt, and crystal malt to the kettle. Maintain the temperature at around 150°F (65°C) for 60 minutes, stirring occasionally.
2. Sparging
After mashing, sparge the grains by rinsing them with hot water (approximately 170°F or 77°C) to extract the sugars. Collect the wort (liquid) in a separate kettle.
3. Boiling
Bring the collected wort to a boil. Once boiling, add the Cascade hops and boil for 60 minutes. 30 minutes into the boil, add the Citra hops.
4. Cooling
After the 60-minute boil, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).
5. Fermentation
Transfer the cooled wort into a sanitized fermentation vessel. Add the mango puree and the yeast. Seal the vessel with an airlock and let it ferment for 1-2 weeks at room temperature.
6. Priming
After fermentation is complete, dissolve the corn sugar in a small amount of boiling water. Add this solution to the beer before bottling to carbonate.
