This American Imperial IPA is a Step up from the average IBU’s. The High Stepper has golden chestnut color with a well-balanced malt profile.

In a large mash tun, heat 5 gallons of filtered water to 165°F (74°C). Add the Pale Malt, Crystal Malt, and Carapils Malt to the water, stirring well to ensure all grains are submerged.

Mashing the Grains

Maintain the mash temperature at around 152°F (67°C) for 60 minutes. Stir occasionally to ensure even temperature throughout the mash.

Steeping

After the mash period, drain the wort into a kettle, sparging with additional hot water until you collect about 6.5 gallons of wort.

Lautering

Bring the collected wort to a boil. Once boiling, add the Centennial Hops and boil for 60 minutes.

Boiling the Wort

After 30 minutes of boiling, add the Cascade Hops. At the end of the 60-minute boil, add the Amarillo and Simcoe Hops, stirring well to incorporate.

Adding Flavor Hops

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C). Transfer the cooled wort to a sanitized fermentation vessel.

Cooling the Wort

Sprinkle the American Ale Yeast on top of the cooled wort. Seal the fermentation vessel with an airlock.

Pitching the Yeast

Allow the beer to ferment at around 68°F (20°C) for 1-2 weeks, until fermentation is complete.

Fermentation

Once fermentation is complete, siphon the beer into sanitized bottles, leaving about an inch of headspace. Cap the bottles.

Bottling the Beer

Let the bottles sit at room temperature for an additional 1-2 weeks to carbonate before refrigerating and enjoying.
