The yeast ferments the sugar in the honey and leaves behind a dry, crisp beer with a delicate orange blossom and honey character.

In a large mash tun, heat 3 gallons of water to around 165°F (74°C). Add the Pilsner and Carapils malts to the water. Stir well and maintain the temperature around 150-155°F (65-68°C) for 60 minutes.

Prepare the Mash

After the mashing process, sparge the grains with an additional 2 gallons of water heated to 170°F (77°C) to extract the sugars. Collect the wort in a brew kettle.

Sparging

Bring the collected wort to a rolling boil. Add the Hallertau hops at the beginning of the boil and boil for 60 minutes.

Boil the Wort

With 15 minutes left in the boil, add the Saaz hops to the kettle.

At the end of the boil, remove the kettle from heat and stir in the Orange Blossom Honey until fully dissolved.

Add Honey

Cool the wort rapidly using a wort chiller or ice bath until it reaches about 70°F (21°C). Transfer the cooled wort to a sanitized fermentation vessel.

Cool and Transfer

Sprinkle the packet of American Ale yeast on top of the wort. Seal the fermentation vessel with an airlock.

Pitch Yeast

Allow the beer to ferment for about 1-2 weeks at room temperature until fermentation activity has slowed down.

Fermentation Period

Once fermentation is complete, bottle the beer with priming sugar to carbonate. Let it condition for another 1-2 weeks.
