Clean and sanitize all brewing equipment including fermenters, bottles, and any utensils you will use.

Prepare the Equipment

In a large brew kettle, heat 5 gallons of filtered water to approximately 165°F (74°C).

Heat the Water

Add 5 lbs of Vienna Malt to the heated water and maintain a temperature of 152°F (67°C) for 60 minutes. Stir occasionally.

Mash the Malt

After mashing, sparge the grains with hot water to collect the wort. Aim for about 5 gallons of wort.

Sparging

Bring the wort to a rolling boil. Once boiling, add 1 oz of East Kent Goldings hops and boil for 60 minutes.

Boil the Wort

With 15 minutes left in the boil, add 1 oz of Cascade hops and 0.5 oz of Amarillo hops.

Add Additional Hops

After the 60-minute boil, cool the wort quickly to approximately 68°F (20°C) using a wort chiller or ice bath.

Cool the Wort

Transfer the cooled wort to a sanitized fermentation vessel and pitch 1 pkg of gluten-free yeast. Seal the vessel with an airlock.

Pitch the Yeast

Allow the beer to ferment for about 2 weeks at a stable temperature of 68°F (20°C).

Ferment

Dissolve 3 oz of priming sugar in 2 cups of boiling water. Add this solution to the bottling bucket.

Prepare Bottling Solution

Siphon the fermented beer into the bottling bucket, mixing gently with the priming solution. Fill sanitized bottles and cap them.

Bottle the Beer

Store the bottles at room temperature for 1 to 2 weeks to allow carbonation to develop.

Age the Bottled Beer

After carbonation, chill the bottles in the fridge and enjoy your refreshing Athletic Upside Dawn Golden Ale!
