Method

Cocktail

1

Build and combine

Chill a rocks glass or coupe by filling with ice or placing briefly in the freezer. In a mixing glass or shaker filled with ice, add 2 oz rosso vermouth, 0.5 oz Flor de Azur, 0.25 oz crème de cassis, and 0.5 oz fresh yuzu juice.

2

Stir and strain

Stir the mixture gently with a bar spoon for about 20–30 seconds until well chilled and slightly diluted (or if you prefer a slightly brighter texture, give a single short shake). Discard the ice from the chilled serving glass and strain the vermouth mixture into the glass over one large ice cube or a couple of chilled smaller cubes.

3

Top with soda

Carefully top the cocktail with 3 oz chilled Earl Grey soda to preserve effervescence. Pour slowly over the back of a bar spoon if you want a layered effect; otherwise pour directly and give one gentle stir to integrate, about 3–4 revolutions.

4

Garnish and finish

Express an orange peel over the drink to release oils and either drop the peel in or rest a dried orange wheel on the rim. Serve immediately.

Optional Soda (homemade Earl Grey soda)

5

Brew 1 cup of strong Earl Grey tea using double the tea leaves/tags you normally would and steep for 5 minutes. Strain and cool completely in the refrigerator.

6

Once cooled, stir 2 tbsp simple syrup into the concentrated tea. Taste and adjust sweetness — the finished soda should be pleasantly aromatic but not overly sweet.

7

To assemble soda: mix the sweetened concentrated tea with 1 cup chilled club soda shortly before serving (about 1 part concentrate to 1 part club soda). Keep chilled and use 3 oz per cocktail as directed above.
