Method

Prepare Honey Syrup and Butterfly Pea Infusion

Honey syrup

Combine the 0.5 tbs honey and 0.5 oz warm water in a small jar or container. Stir until fully dissolved to make an easy honey syrup (sweeter and better integrating than straight honey).

Butterfly pea infusion

If you don't have a concentrated butterfly pea infusion, steep 1 tsp dried butterfly pea flowers in 2 oz hot water for 5 minutes, strain and cool. Use 0.25 oz of this concentrated cooled infusion for color. Keep remaining infusion refrigerated for another use.

Build the Cocktail

Chill a stemmed wine glass or coupe. Add one large ice cube (or fill briefly and discard if you prefer not to dilute).

In a cocktail shaker (or mixing glass) add: 2 tbs Ritual Ø-Proof Gin Alternative, 0.75 oz fresh lime juice, 0.75 oz fresh white grapefruit juice, 0.5 tbs honey syrup, and 0.5 tsp citrus oleo saccharum.

Add 2–3 small ice cubes to the shaker and shake vigorously for 8–10 seconds to properly marry the ingredients and chill them.

Double-strain the shaken mixture into the chilled glass over the large ice cube (or into the glass if using just chilled glass).

Color & Sparkle Finish

Gently pour 4 oz chilled Kyle Minogue NA Sparkling Rosé down the side of the glass to top. Pour slowly so the sparkling rosé layers lightly and retains effervescence.

Using a dropper or spoon, add 0.25 oz concentrated butterfly pea infusion to one spot on the drink. The blue will swirl and react subtly with the citrus to create a changing 'starry night' hue. If you prefer more dramatic color, add a few more drops until desired shade is reached.

If using edible silver dust, very lightly dust the top of the drink with a small pinch (approx 0.1 tsp) and gently swirl the glass to disperse a subtle shimmer like stars. Use sparingly; it's purely decorative.

Garnish & Serve

Express the oils of a grapefruit twist over the drink, rub the twist on the rim and lay it across the glass. Add a thin lime wheel on the rim or floated on the surface for contrast.

Serve immediately while the sparkling rosé is lively. Advise the guest to stir gently if they want uniform color before sipping; the visual layering and color reaction are part of the presentation.
