Method
Cocktail Base
Measure and combine
Chill an old‑fashioned / rocks glass in the freezer or by filling with ice water. In a cocktail shaker, add 2 oz Fauxm (or another non‑alcoholic rum alternative), 0.5 oz Pentire Adrift, 0.75 oz fresh lemon juice, and 0.5 oz simple syrup.
Add aromatics for infusion
Into the shaker add 3 fresh sage leaves and 1 tsp ground cinnamon. (If you prefer a subtler cinnamon, use 1/2 tsp.)
Shake
Add ice to the shaker (enough to fill halfway) and shake vigorously for 12–15 seconds until well chilled and slightly frothy from the citrus.
Strain & Serve
Prepare glass
Discard the ice water from the chilled rocks glass and place one large clear ice cube in the glass.
Double strain
Double strain the shaken cocktail into the prepared glass over the large ice cube using a fine mesh strainer to catch bits of sage and cinnamon.
Finish with aromatics
Express a lemon peel over the drink by holding it skin‑side down and giving it a firm twist to release oils, then rub the peel around the rim and drop it into the drink. Lightly dust the top of the cocktail with a scant 1/8 tsp ground cinnamon.
Garnish
Slap a sprig of fresh sage between your palms (to wake the oils) and rest it on the ice as a garnish so it sits above the drink, providing aroma as you sip.
