Brown the Beef

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and brown them on all sides. Remove the beef and set aside.

Sauté the Vegetables

In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent, about 5 minutes.

Add Paprika and Broth

Stir in the paprika, then return the beef to the pot. Pour in the beef broth and bring to a boil.

Simmer

Reduce the heat to low, cover, and let it simmer for about 1 hour.

Add Vegetables

After 1 hour, add the carrots, potatoes, and red bell pepper. Season with salt and black pepper to taste. Continue to simmer for an additional 30 minutes, or until the vegetables are tender and the beef is fork-tender.

Serve with Spaetzle

Serve the goulash hot, alongside freshly made spaetzle.
