Preparation
Prepare the Crust
Preheat your oven to 325°F (163°C). In a mixing bowl, combine graham cracker crumbs and melted butter. Mix until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even crust.
Make the Filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar and sour cream, mixing well. Then add the vanilla extract and mix until fully incorporated. Finally, add the eggs one at a time, mixing until just combined after each addition.
Combine and Bake
Pour the cheesecake filling over the prepared crust in the springform pan. Bake for 55-60 minutes or until the center is set and a slight jiggle remains. Turn off the oven and let the cheesecake cool in the oven for 1 hour.
Cool and Chill
After cooling, remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours, or overnight.
Prepare the Chocolate Drizzle
In a small saucepan, melt 1 cup of chocolate chips with 1 tablespoon of butter over low heat, stirring until smooth. Let cool slightly before drizzling over the cheesecake.
Serve with Whipped Cream
Before serving, whip heavy cream until soft peaks form. Serve slices of cheesecake topped with chocolate drizzle and a dollop of whipped cream.
