Make the sauce
In a small bowl combine mayonnaise, yellow mustard, ketchup, dill pickle relish, apple cider vinegar, hot sauce (if using), salt, and black pepper. Stir until smooth. Taste and adjust seasoning. Chill in refrigerator while you prepare the other components (at least 10 minutes).

Form patties
Place the ground Wagyu in a bowl. Sprinkle Worcestershire sauce over the meat and gently mix with your hands just until combined — avoid overworking. Divide the meat into 8 equal portions (~2 oz each). Gently form each portion into a loose ball, then press into 2-inch-wide, 3/4-inch-thick patties. Make a shallow dimple in the center of each patty with your thumb to help them cook evenly.

Season
Season both sides of each patty with the fine sea salt and freshly ground black pepper just before cooking.

Cook patties
Heat a heavy skillet or griddle over medium-high heat until very hot (about 3–5 minutes). Add the neutral oil and spread it to coat the surface. Place the patties on the hot surface, leaving space between them. Cook for 2–3 minutes without moving to develop a crust. Flip and cook for another 1.5–2 minutes for medium-rare to medium (adjust time if you prefer more done). During the last 30–45 seconds of cooking, place a cheese slice on each patty and cover with a lid or tent with foil briefly to melt the cheese. Remove patties and let rest on a plate for 2 minutes.

Assemble sliders
Spread about 1 teaspoon of the prepared slider sauce on the bottom of each toasted bun. Place a cheddar-topped Wagyu patty on each bottom bun. Top patties with a thin slice of red onion (about 1/2 teaspoon), one or two pickle slices, and a pinch of chopped fresh parsley if using. Add a small dollop (about 1/2 teaspoon) of sauce on the top bun or on the underside, then close the slider.

Serve
Arrange sliders on a platter and serve immediately while hot. Provide extra sauce on the side if desired.
