Red Wine Base

Combine wine
Pour 4 cups of dry red wine into a large pitcher or mixing bowl that will hold at least 6 cups.

Prepare fruit
Thinly slice 1 orange and half a lemon. Core and dice one apple to yield about 1 cup of pieces. Add all fruit to the pitcher with the wine.

Dissolve sugar
Add 1/4 cup granulated sugar to the wine and fruit. Stir vigorously for 30–60 seconds until the sugar begins to dissolve. If preferred, gently muddle a few pieces of orange and apple against the side of the pitcher to release more juice and oils.

Add liqueur
Stir in 1/4 cup orange liqueur (Cointreau or Triple Sec) to add depth and a brighter citrus note.

Spice infusion
Add 1 cinnamon stick, 4 whole cloves, and 1 star anise (if using) to the pitcher. Stir once to combine. These spices will gently infuse the wine with warm aromatics.

Chill and marry flavors
Cover the pitcher and refrigerate for at least 1 hour and up to 6 hours. Chilling allows the fruit, sugar and spices to meld into the wine. For a quick version, refrigerate 30 minutes; for more developed flavor, refrigerate longer.

Prepare glassware
When ready to serve, place ice (about 1/4–1/2 cup per glass) into individual wine glasses or short tumblers.

Strain (optional)
If you prefer fewer solids, strain the chilled mixture through a fine-mesh sieve into a clean pitcher, pressing on fruit to extract juices. Alternatively, leave fruit in the pitcher and spoon into glasses for a rustic presentation.

Top with bubbles
Pour the wine mixture into glasses, filling each about two-thirds full. Top each glass with club soda or sparkling water to taste (about 2–3 tablespoons per glass; total roughly 1 cup to serve 4). Stir gently to combine.

Garnish and serve
Finish each glass with a fresh mint sprig and a small piece of the macerated fruit. Serve immediately so the soda stays fizzy.
