    Make dill cream cheese

    In a small bowl, combine 4 oz cream cheese (softened), 2 tbsp finely chopped fresh dill, 1 tsp lemon zest, 1 tsp fresh lemon juice, 1 tsp salt, and 1 tsp freshly ground black pepper. Mix until smooth and homogenous. Taste and adjust salt or lemon if needed.

    Toast bread

    Heat a skillet over medium or use a toaster. Brush both sides of each sourdough slice lightly with olive oil (about 1 tsp divided) or leave plain. Toast slices until golden and crisp at the edges, about 2–3 minutes per side in a skillet or 3–4 minutes in a toaster depending on your equipment.

    While warm, spread about 1 oz (approx. 2 tbsp) of the dill cream cheese evenly over each slice of toasted sourdough.

    Prepare avocado

    Halve, pit, and scoop the flesh of 2 ripe avocados into a bowl. Add 1 tbsp fresh lemon juice, 1 tsp salt, and 1 tsp red pepper flakes (optional). Lightly mash with a fork until slightly chunky — you want texture so the salmon sits nicely. Taste and adjust seasoning.

    Evenly distribute the mashed avocado over the dill-cream-cheese–topped toasts, about 1/2 avocado per slice (adjust to preference). Smooth gently to create an even layer, leaving a small edge of cream cheese visible.

    Dress smoked salmon

    Place 8 oz smoked salmon in a bowl or on a plate. Drizzle 1 tsp extra-virgin olive oil over the salmon and sprinkle 2 tsp everything bagel seasoning; gently toss or fold to combine so seasoning adheres but the salmon doesn't break apart.

    Arrange roughly 2 oz of seasoned smoked salmon over each avocado-topped toast, folding slices for height and even coverage.

    Scatter 2 tbsp capers and 1 tbsp thinly sliced red onion across the toasts. Finish with a crack of fresh black pepper to taste and a small sprig of fresh dill on each.

    If using, top with a handful of microgreens or arugula and an optional light drizzle (about 1 tsp total) of olive oil.

    Serve immediately with lemon wedges at the side; squeeze a little fresh lemon juice over each toast just before eating for brightness.
