Method
Cocktail
- 1
Chill glass
Place a martini or coupe glass in the freezer for at least 5 minutes to chill, or fill it with ice water while you prepare the cocktail.
- 2
- 3
Dry shake (if using egg white)
Add vodka, lemon liqueur, fresh lemon juice, simple syrup, pear nectar, and the egg white to a cocktail shaker. Seal and shake vigorously without ice for 15–20 seconds to develop a silky foam.
- 4
Wet shake
Add ice to the shaker (about 4–6 large cubes, roughly 1 cup). Shake vigorously for 12–15 seconds until the shaker is very cold to the touch and the mixture is well chilled and slightly diluted.
- 5
Double strain the cocktail into the chilled martini or coupe glass using a hawthorn strainer and a fine mesh strainer to remove ice shards and ensure a smooth texture.
Garnish & Finish
- 6
Gently lay the pear slice or fan on the surface of the cocktail or balance it on the rim.
- 7
Twist the lemon peel over the drink to express oils, then place it on the rim or float it on the foam.
- 8
For an elegant touch, place a pear drop candy or small edible pearl on the foam or skewered on the pear slice.
- 9
Serve immediately while cold and aromatic.
