    Chill glassware (optional)

    Place champagne flutes or coupe glasses in the refrigerator for 15–20 minutes or fill them briefly with ice and cold water to chill. If using ice to chill, discard ice/water and dry glasses before pouring.

    Prepare orange juice

    If using fresh oranges, roll each orange firmly on the counter to loosen juices, cut in half, and juice until you have the required amount (about 3–4 medium oranges for 1 cup/240 ml). Strain if desired to remove pulp for a smoother drink.

    Sweeten (optional)

    If you prefer a slightly sweeter mimosa, add up to 2 teaspoons of simple syrup or 2 teaspoons of orange liqueur to the bottom of each glass and swirl to combine.

    Combine sparkling wine and orange juice

    Pour 1/2 cup chilled sparkling wine into each flute (or pour 1 part wine to 1 part juice by volume). Slowly top with 1/2 cup fresh orange juice. Pour gently down the side of the glass to preserve bubbles and reduce foaming. Do not stir vigorously.

    Garnish and serve

    Garnish each glass with an orange slice or twist on the rim. Serve immediately while sparkling wine is bubbly.
