    Measure & Combine

    In a mixing glass or small pitcher, combine 2 oz dark rum, 0.5 oz spiced rum, 0.75 oz fresh lemon juice, and 0.5 oz maple syrup.

    Add Spices

    Add 0.5 oz ginger liqueur (or ginger syrup) and 0.25 oz allspice dram, then add 2 dashes of Angostura bitters. If using ground allspice substitute, ensure it's fully dissolved by stirring with the liquid and the small added simple syrup portion.

    Shake

    Fill the shaker with ice and shake vigorously for 12–15 seconds until well-chilled and slightly diluted. This both chills and integrates the syrups and liqueurs for a balanced profile.

Finish & Garnish

    Strain & Heat

    Double-strain the chilled mixture into a pre-warmed heatproof mug or toddy glass. Top with 2 oz hot water (not boiling — about 85–95°C / 185–203°F) and stir once gently to combine and mellow the spirits.

    Garnish & Serve

    Float a large lemon wheel in the mug, add one whole star anise, and grate a little fresh nutmeg over the top if desired. Serve immediately while warm.
