Prepare bread and cheese
Grate the cheddar and Gruyère (if using) and place in a bowl. Spread 1 tablespoon of softened butter evenly on the outside face of each bread slice. If you prefer a slightly tangy, crisp exterior, spread mayonnaise (about 1/2 tsp) across the outer side of each slice instead of butter. On the inside face of one slice, spread the Dijon mustard evenly (about 1/2 tsp).

Assemble sandwich
On the inside face of the slice without mustard, evenly distribute the grated cheddar and Gruyère so the cheese reaches near the edges but leaves a small margin to avoid overflow. Sprinkle the black pepper and optional garlic powder evenly over the cheese. Place the second slice of bread on top with the buttered/mayo side facing out.

Cook the sandwich
Place the assembled sandwich in the skillet. Cook for 3–4 minutes on the first side, pressing gently with a spatula every 30–45 seconds to help the cheese contact the bread and encourage even melting. When the first side is golden brown and crisp, carefully flip the sandwich. If the second side is browning too quickly before the cheese melts, reduce heat to low and cover the skillet with a lid for 1–2 minutes to trap heat and melt the cheese fully. Continue cooking until the second side is golden brown and the cheese is fully melted (total cook time 6–8 minutes).

Finish and serve
Remove the sandwich from the skillet and transfer to a cutting board. Let rest for 1 minute to allow the cheese to settle. Slice in half diagonally or down the middle and serve immediately. Optional: serve with tomato soup, pickles, or ketchup.
