    Preheat and prepare pan

    Preheat oven to 350°F (175°C). Grease a 9-inch (23 cm) round cake pan and line the bottom with parchment paper.

    Dry ingredients

    In a large bowl, whisk together the all-purpose flour, baking powder, and 1/2 teaspoon fine sea salt until evenly combined.

    Wet ingredients

    In a separate bowl, whisk the melted butter and granulated sugar until smooth. Add the eggs one at a time, whisking after each addition until incorporated, then whisk in the milk and vanilla extract.

    Combine and add almond meal

    Pour the wet mixture into the dry ingredients and fold gently with a spatula until just combined. Fold in the smoked almond meal (ground smoked almonds) until evenly distributed — this provides the nutty, lightly smoky body of the cake.

    Bake

    Pour the batter into the prepared pan, smooth the top, and bake on the center rack for 28–33 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter). Remove from oven and let cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.

Smoky Citrus Layer

    While the cake bakes, combine 1 tablespoon orange zest, 1/4 cup orange juice, 2 tablespoons light brown sugar, and 1/4 teaspoon liquid smoke in a small saucepan. Warm over low heat, stirring, until sugar dissolves and mixture is slightly reduced (2–3 minutes). Taste and adjust liquid smoke — it should lend a subtle smokiness, not overpower citrus. Remove from heat and set aside to cool slightly.

    When the cake is removed from the oven and still warm (after the 10-minute rest), use a skewer or fork to poke evenly spaced holes across the top. Spoon or brush the smoky citrus mixture over the warm cake so it soaks into the crumb. Allow cake to cool completely on a rack while it absorbs the syrup.

Nut Crunch Topping

    In a small skillet over medium heat, melt 2 tablespoons butter. Add 1 tablespoon light brown sugar and 1 cup chopped mixed nuts, stirring to coat. Sprinkle in 1/4 teaspoon smoked paprika and 1/4 teaspoon fine sea salt. Cook, stirring frequently, until nuts are toasted and caramelized slightly, 4–6 minutes. Watch carefully to prevent burning.

    Transfer the nut mixture to a sheet of parchment to cool and set. Break into clusters once cool. Reserve about 3/4 cup for topping and 1/4 cup for serving alongside slices.

Citrus Glaze & Assembly

    Whisk powdered sugar, 2 tablespoons fresh orange juice, 1/2 teaspoon lemon zest, and 1/8 teaspoon sea salt in a small bowl until smooth. The glaze should be pourable but thick; add more powdered sugar to thicken or 1/2 teaspoon more orange juice to thin.

    Place the cooled cake on a serving plate. Drizzle the citrus glaze over the top, allowing it to drip down the sides. Immediately sprinkle the reserved nut crunch clusters over the glazed top so they adhere. If desired, press a few whole toasted pistachios or a light dusting of extra orange zest for vibrancy.

    Allow glaze to set for 15–20 minutes. Slice and serve with the remaining nut clusters alongside. Store cake loosely covered at room temperature for up to 2 days or refrigerated up to 4 days; bring to room temperature before serving.
