Blue Corn Crêpes

    Make the batter - whisk method

    In a large mixing bowl, whisk together 1 cup blue cornmeal, 1 cup all-purpose flour, 1 tablespoon granulated sugar, and 1 teaspoon salt until evenly combined.

    Make a well in the center of the dry ingredients. Add 2 large eggs and 1/2 cup of the milk. Whisk gently to start incorporating the dry mixture into the eggs and milk, drawing additional flour from the sides as you go.

    Gradually whisk in the remaining 1 cup of milk (1.5 cups total) until the batter is smooth and free of lumps. Whisk in 3 tablespoons melted butter and 1 teaspoon vanilla extract (if using). The batter should be thin and pourable; if it's too thick, add milk 1 tablespoon at a time until it reaches a heavy cream consistency.

    Cover the bowl with plastic wrap and let the batter rest at room temperature for 20–30 minutes. This hydrates the blue corn and relaxes gluten for tender crêpes. If you need to hold the batter longer, refrigerate for up to 24 hours and bring back to near room temperature before cooking.

    Heat a nonstick skillet or 8–10 inch crêpe pan over medium heat until hot. Lightly brush the pan with a little neutral oil or melted butter (about 1/2 teaspoon).

    Pour or ladle about 1/4 cup batter into the center of the pan, immediately lift and tilt the pan in a circular motion to spread the batter into a thin, even round (adjust amount for a larger/smaller pan to get a very thin crêpe).

    Cook until the edges lift and the underside is lightly golden, about 45–60 seconds. Use a thin spatula to check doneness. Flip and cook the second side for 20–30 seconds more until set and lightly browned. Transfer to a plate and keep warm. Repeat with remaining batter, wiping the pan and re-oiling as needed. Yield: about 10–12 thin crêpes depending on pan size.

    Stack cooked crêpes between sheets of parchment to prevent sticking, and keep covered with a clean towel to stay warm while finishing the batch.

Whipped Crème Fraîche

    Chill a medium mixing bowl and whisk or beaters in the freezer for 5–10 minutes to help the crème fraîche whip more easily.

    Remove bowl and pour in 1 cup well-chilled crème fraîche. Add 1 tablespoon powdered sugar, 1/4 teaspoon vanilla extract (if using), 1/2 teaspoon lemon zest, and 1/8 teaspoon sea salt.

    Using a handheld mixer or whisk, whip the crème fraîche on medium speed until it thickens to soft peaks (it will be lighter and less stiff than heavy cream whipped to peaks), about 1–2 minutes. Taste and adjust sweetness or salt. Do not overmix — you want airy cream, not broken or grainy texture.

    Keep chilled until ready to serve. If you need to hold it for longer, cover and refrigerate up to 6 hours; briefly re-whisk by hand to restore airy texture if it softens.

Assembly & Serving

    Place a warm blue corn crêpe on a plate. Spoon 1–2 tablespoons of whipped crème fraîche onto one half of the crêpe.

    Fold the crêpe in half, then in half again (or roll), arranging the filling so it peeks out. Repeat with remaining crêpes.

    Top each plated crêpe with fresh berries (about 2 tablespoons per crêpe), a drizzle of maple syrup (about 1/2 teaspoon–1 teaspoon), and a sprinkle of toasted sliced almonds or pepitas for crunch.
