Prepare pan and aromatics
Place a large, heavy 12-inch skillet over medium heat. Add the unsalted butter and let it melt without browning. Stir in the dark brown sugar and light corn syrup until sugar dissolves and mixture is glossy, about 1–2 minutes.

Season the sauce
Whisk in the ground cinnamon, freshly grated nutmeg and the lemon juice. Let the sauce bubble gently for 1 minute so flavors meld. If using banana liqueur, stir it in now and cook for 30 seconds to warm through.

Add rum and flambé safely
Reduce heat to low. Carefully add the dark rum to the pan (stand back, remove the pan from direct heat if your cooktop is gas or windy). Using a long lighter or match, ignite the rum to flambé. Let the flames burn off naturally — this takes 20–30 seconds — and will reduce and concentrate the sauce. If flame does not catch, return the pan to low heat and simmer gently for 1–2 minutes to cook off some alcohol.

Prepare bananas
While sauce is warming, peel the bananas and slice them lengthwise in half. If bananas are large, cut each half into two so pieces are about 4–5 inches long.

Cook bananas in sauce
After flambé finishes (or after simmering), return the skillet to medium-low heat. Gently place the banana halves cut-side down into the sauce and cook 1 to 1½ minutes until they begin to soften and caramelize. Carefully flip and cook the other side 30–45 seconds — do not overcook or the bananas will become mushy.
