    Arrange and heat

    Remove bacon from refrigerator and separate slices so they are not stuck together. If using oven method, preheat oven to 400°F (200°C). If using skillet, select a large cast-iron or heavy skillet and leave it at room temperature while you prepare bacon.

    Line a rimmed baking sheet with foil for easy cleanup and place a wire rack on top if you want crispier bacon. Lay bacon slices in a single layer on the rack or directly on the foil without overlapping. Place the pan in the preheated 400°F (200°C) oven and bake for 15–20 minutes, rotating the pan once at about 10 minutes if your oven runs hot. Check at 12 minutes for thinner bacon and at 18–20 minutes for thick-cut. Remove when bacon reaches desired crispness (edges browned and fat rendered).

    Skillet method

    Place bacon strips in a cold large skillet in a single layer without overlapping. Turn heat to medium. Let the bacon slowly heat and render fat; cook undisturbed for 4–6 minutes, then use tongs to turn slices and continue cooking another 3–6 minutes, adjusting heat between medium and medium-low to avoid burning. Cook until bacon is browned and crisp to your liking. For extra-even cooking, press with a spatula or use a bacon press.

    Microwave method (quick, small quantity)

    Place 2 sheets of paper towel on a microwave-safe plate, arrange 3–4 bacon slices in a single layer, cover with 1–2 more paper towels to prevent splatter. Microwave on high for 3–5 minutes depending on microwave power and bacon thickness. Check at 2.5–3 minutes to avoid overcooking. Repeat for remaining bacon.

    Transfer cooked bacon to a plate lined with paper towels to drain excess fat. Blot the top gently with additional paper towel if desired. Lightly season with black pepper or drizzle with maple syrup if using. Let rest 1–2 minutes so fat firms slightly and bacon crisps further.

    Store cooled bacon in an airtight container in the refrigerator for up to 4–5 days. Reheat gently in a skillet, oven at 350°F (175°C) for 5–8 minutes, or microwave on medium-low for short intervals until warmed.
