Prepare the Cream Mixture
In a saucepan, combine the heavy cream, lemon zest, and vanilla extract. Heat over medium heat until it just starts to simmer, then remove from heat and let steep for 15 minutes.
Whisk Egg Yolks
In a mixing bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until the mixture is pale and slightly thickened.
Combine Mixtures
Gradually pour the warm cream mixture into the egg yolk mixture, whisking continuously to prevent the eggs from scrambling.
Strain Mixture
Strain the custard mixture through a fine mesh sieve into a large measuring cup or bowl to remove the lemon zest.
Cool and Chill
Remove the ramekins from the water bath and let them cool to room temperature. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
Caramelize the Sugar
Before serving, sprinkle a thin layer of brown sugar on top of each custard. Using a kitchen torch, caramelize the sugar until it bubbles and turns golden brown. Allow to cool for a minute before serving.
