Prepare the Ingredients
Wash and slice the heirloom tomatoes into thick slices. Finely slice the Walla Walla sweet onion. Separate the endive leaves and rinse them thoroughly.
Sear the Endive
In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the endive leaves and sear them for 2-3 minutes on each side until they are golden brown and slightly wilted. Remove from heat and set aside.
Make the Dressing
In a small bowl, whisk together the remaining olive oil, lemon juice, salt, and black pepper. Adjust seasoning to taste.
Assemble the Salad
On a serving platter, arrange the heirloom tomato slices. Top with the seared endive leaves, Walla Walla sweet onion slices, and citrus segments. Crumble chèvre over the top and drizzle with the dressing.
Garnish and Serve
Finish with fresh herbs scattered on top. Serve immediately as a fresh salad or appetizer.
