Prepare the Ingredients
Wash and chop the spinach, halve the cherry tomatoes, and slice the olives. Crumble the feta cheese and set aside.
Beat the Eggs
In a mixing bowl, crack the eggs, add salt and black pepper, and whisk until well combined.
Cook the Spinach
In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Add the spinach and sauté until wilted, about 2 minutes. Remove from the skillet and set aside.
Cook the Omelet
In the same skillet, add the remaining tablespoon of olive oil. Pour in the beaten eggs, swirling to coat the pan evenly. Cook for about 2-3 minutes until the edges start to set.
Add Fillings
Sprinkle the cooked spinach, cherry tomatoes, olives, and crumbled feta evenly over one half of the omelet.
Fold and Serve
Carefully fold the omelet in half over the fillings and cook for another minute until the cheese starts to melt. Slide onto a plate and serve with a dollop of tzatziki on the side.
