Waffle Preparation
Activate the Yeast
In a small bowl, combine warm milk (110°F/43°C) with sugar and yeast. Let it sit for about 5-10 minutes until frothy.
Mix the Batter
In a large mixing bowl, whisk together flour and salt. In a separate bowl, beat the eggs and add melted butter and vanilla extract. Combine the yeast mixture with the egg mixture and then pour it into the flour. Stir until just combined.
Add Pearl Sugar
Gently fold in the Belgian pearl sugar into the batter. Cover the bowl with a kitchen towel and let it rise in a warm place for about 30 minutes.
Preheat the Waffle Iron
Preheat your Belgian waffle iron according to the manufacturer’s instructions.
Cook the Waffles
Spray the waffle iron with non-stick cooking spray. Pour the batter onto the preheated waffle iron and cook until golden brown and crisp, about 5-7 minutes.
