    Prepare aromatics

    Heat 3 tbs vegetable oil in a large, heavy-bottomed pot or Dutch oven over medium heat. When oil is shimmering, add the sliced shallots and cook until soft and beginning to brown, about 4–5 minutes. Add minced garlic and ginger and cook 30–45 seconds until fragrant.

    Bloom curry

    Add 2 tbs red curry paste, 1 tbs yellow curry powder and 1 tsp turmeric powder to the aromatics. Stir constantly for 1–2 minutes to bloom the spices and remove any raw paste taste.

    Add lemongrass and liquids

    Stir in the smashed, thinly sliced lemongrass and torn kaffir lime leaves (if using). Pour in 400 ml coconut milk and 900 ml chicken or vegetable stock, scraping up any browned bits from the pot. Bring mixture to a gentle simmer over medium-low heat.

    Season broth

    Add 2 tbs light soy sauce, 1 tbs fish sauce (or substitute), 2 tsp palm sugar, 1/2 tsp salt and 1/4 tsp freshly ground black pepper. Taste and adjust — the broth should be savory, slightly sweet, aromatic and balanced. Keep at a low simmer while you prepare other components, about 10–15 minutes to let flavors meld.

    Cook protein

    If using chicken: slice thighs thinly against the grain. When broth is simmering, add the chicken to the pot and poach gently for 6–8 minutes until just cooked through. If using tofu, gently warm tofu cubes in the simmering broth for 3–4 minutes. If adding shrimp, add in the last 2–3 minutes of cooking so they stay tender.

    Prepare garnishes

    While broth simmers, warm a small skillet over medium heat and briefly toast the pickled mustard greens for 1–2 minutes just to warm them, or leave cold if preferred. Thinly slice red chili, chop cilantro and green onions, and prepare lime wedges. Have crispy fried shallots and crispy noodles/wonton strips ready.

    Cook fresh egg noodles according to package instructions (usually 1–3 minutes in rapidly boiling water) until just tender. Drain well, toss with 1 tsp neutral oil so they don’t stick, and divide among serving bowls.

    Taste the broth one last time and, if needed, add lime juice 1 tbs and 1/2 tsp sesame oil for aroma. Remove and discard lemongrass stalk pieces and kaffir lime leaves (if large).

    Ladle the hot curry broth and chicken (or chosen protein) over the noodles in each bowl, making sure to distribute solids evenly.

    Top each bowl with a small handful of crispy fried shallots, a spoonful of pickled mustard greens, a few sprigs of cilantro, sliced red onion/shallot, green onions, sliced red chilies, and a handful of crispy fried noodles or wonton strips for texture. Serve with lime wedges on the side so diners can add extra acidity to taste.
