    Trim and season

    Pat duck legs dry with paper towels. Trim any excess fat or loose skin if needed. Score the skin in a diamond pattern, being careful not to cut into the meat. Season both sides with kosher salt and black pepper.

    Marinate briefly

    Combine minced garlic and grated ginger and rub over the meat side of the duck legs and lightly into the scored skin. Let rest in the refrigerator, uncovered, for 30 minutes to 1 hour to allow seasoning to penetrate and to help dry the skin for better crisping.

Tamarind Sauce

    Prepare tamarind liquid

    If using concentrated tamarind paste, whisk the tamarind concentrate with 60 ml (about 1/4 cup) hot water until smooth and slightly diluted. Strain if there are fibers or seeds for a smoother sauce.

    Make the sauce

    In a small saucepan over medium heat, add 1 tbs vegetable oil and sweat the minced shallot, chopped lemongrass and sliced chili for 2–3 minutes until fragrant and softened (do not brown). Add the diluted tamarind, palm or light brown sugar, fish sauce, soy sauce and rice vinegar. Bring to a gentle simmer and stir until sugar is fully dissolved. Reduce heat to low and simmer 6–8 minutes until slightly thickened and glossy. Taste and adjust: more sugar if too tart, more tamarind if too sweet, or more fish sauce for salt/umami.

    Finish sauce

    Off heat, stir in 1 tablespoon unsalted butter to add sheen and mellow the flavors. Keep warm or reheat gently when ready to glaze the duck.

Sear, Roast & Glaze

    Render and sear the skin

    Preheat oven to 200°C (400°F). Heat a large ovenproof skillet over medium heat and add 2 tbs vegetable oil. Place duck legs skin-side down in the dry hot pan (skin should sizzle). Press gently to ensure full contact. Cook 6–8 minutes until the skin is deeply browned and much of the fat has rendered. Spoon off excess fat into a heatproof container (reserve for other use) but leave a thin layer to help crisp.

    Roast in oven

    Flip duck legs so skin-side up. Transfer the skillet to the preheated oven and roast 20–25 minutes for tender meat and fully cooked legs (internal temperature should reach 74°C / 165°F at the thickest point). Cooking time will vary by size; check earlier if legs are small.

    Glaze and finish

    Remove the skillet from oven and place over medium heat on the stove. Spoon tamarind sauce over each duck leg, turning once to coat and allowing sauce to bubble and caramelize slightly for 1–2 minutes. Baste repeatedly so sauce clings to the skin. If you prefer a thicker glaze, return to oven for 3–5 minutes. Finish by spooning any pan juices into the sauce to combine.

Plating & Garnish

    Transfer glazed duck legs to a warm platter. Sprinkle chopped cilantro, optional mint leaves and toasted sesame seeds over the top. Serve with lime wedges on the side for squeezing. Offer extra tamarind sauce in a small bowl.

    Serve suggestions: Pair with jasmine rice, coconut rice, or lightly dressed greens to balance the rich, tangy glaze. Leftover duck can be shredded and used in salads or tacos the next day.
