Prepare sealing slurry
Mix 3 tablespoons water with 1 teaspoon cornstarch in a small bowl until smooth. This will act as glue for sealing the rolls.

Heat a large sauté pan or wok over medium-high heat. Add 1 tablespoon neutral oil. When hot, add the diced onion and sauté 1–2 minutes until translucent.

Add minced garlic and ginger; sauté 30 seconds until fragrant (do not burn).

Add mushrooms and cook 2–3 minutes until they release moisture and begin to brown.

Add shredded cabbage and carrots. Stir-fry 2–4 minutes until cabbage wilts but retains slight crunch. Keep vegetables moving to avoid excess moisture.

Add sliced scallions, toss to combine, then remove the vegetable mixture to a large bowl and let cool slightly (5–8 minutes).
Filling — Protein & Binding (optional)

If using ground meat: in the same pan, add another 1 teaspoon oil and turn heat to medium. Add ground pork (or chicken) and break up with a spatula. Cook 4–5 minutes until no longer pink and any liquid has evaporated.

Season the cooked meat with 1 tablespoon soy sauce and 1/2 tablespoon oyster sauce (from seasoning section) and cook 30 seconds, then transfer to the bowl with vegetables to cool slightly.

If using crumbled tofu: crumble and sauté 3–4 minutes until slightly browned, then season the same way and combine with vegetables.

If you prefer a vegetarian spring roll, omit the protein and proceed with the vegetable base.
Seasoning & Assembly

To the bowl with vegetables (and cooled protein, if used), add: 2 tablespoons soy sauce, 1 tablespoon oyster sauce (or hoisin for veg), 1 teaspoon sesame oil, 1/2 teaspoon sugar, 1/4 teaspoon white pepper, and 1/4 teaspoon chili flakes (if using).

Taste and adjust seasoning. Let filling cool until it’s warm, not hot — so wrappers won’t tear or become soggy (about 10 minutes). Drain any excess liquid by pressing gently with a spoon or using a sieve.

Set up an assembly station: a clean work surface, a damp towel to cover unused wrappers, the cornstarch slurry, and the filling bowl. Keep wrappers covered to prevent drying.

Place one wrapper diamond-shaped in front of you. Spoon about 2–3 tablespoons of filling near the lower corner, forming a log about 1 inch from the edge. Do not overfill.

Fold the lower corner up over the filling, tuck snugly, then fold both side corners toward the center. Brush the top corner edge with the cornstarch slurry and roll tightly to the top to seal. Repeat with remaining wrappers and filling (should make about 12 rolls).

When oil is hot (350°F / 175°C), fry spring rolls in batches without crowding — 3–4 at a time depending on pan size. Fry, turning occasionally, until golden brown and crisp, about 2.5–4 minutes per batch.

Use a slotted spoon to transfer rolls to a wire rack or paper towels to drain. Keep finished rolls warm in a 200°F (95°C) oven on a baking sheet while frying remaining batches (optional).

Whisk together 3 tablespoons rice vinegar, 2 tablespoons soy sauce, 1 tablespoon lime juice, 1 tablespoon water, and 1 teaspoon sugar until sugar dissolves. Stir in minced chili and chopped cilantro if using. Adjust to taste (more sugar for sweetness, more lime for tang).
