Soak rava
In a mixing bowl, combine 1 cup rava and 1 cup plain yogurt. Mix briefly so all rava is moistened. Let sit 10–15 minutes so the rava softens and absorbs moisture.
Adjust consistency
After the rava has softened (10–15 minutes), add 1 cup water gradually while stirring to reach a pourable but slightly thick batter (similar to pancake batter). The exact amount of water may vary depending on rava; the batter should coat the back of a spoon but flow when poured.
Add leavening before cooking
Just before cooking, sprinkle 1/4 tsp baking soda over the batter and fold gently to incorporate. Do not overmix. The batter will become slightly airy; if it appears too thick after baking soda, adjust with 1–2 tbsp water to reach pouring consistency.
Tempering / Mix-ins (optional)
While the batter rests, prepare the tempering. Heat 1 tbsp oil in a small pan over medium heat. Add 1/2 tsp mustard seeds and let them pop. Add 1/2 tsp cumin seeds, 1 tsp urad dal and 1 tsp chana dal. Fry until the dals turn golden and aromatic (about 1–1.5 minutes). Add 1 finely chopped green chili, 1/2 tsp grated ginger and 5 curry leaves; sauté 20–30 seconds until fragrant. Turn off the heat and let cool slightly. Add this tempering into the batter along with 2 tbsp chopped coriander and 1 tsp lemon juice; fold to combine.
Cooking
Pour a ladleful (about 1/3 cup) of batter onto the hot skillet. For a plain rava pancake (thicker uttapam-style), spread slightly to form a 4–5 inch circle. For a thinner, crepe-like rava, spread gently outward with the back of the ladle.
Drizzle a little oil or ghee around the edges and on top. Cook for 2–3 minutes until the underside is golden brown and the top has set and small holes appear.
Flip carefully and cook the other side 1–2 minutes until evenly golden and cooked through. Repeat with remaining batter, adjusting heat as needed so surfaces brown but do not burn.
Transfer cooked rava plain to a plate. Keep covered with a clean kitchen towel to stay warm and soft while finishing the rest.
Serve warm with coconut chutney, tomato chutney or sugar and ghee, as preferred.
