Soak the dal

Rinse 1 cup split urad dal under running water until water runs clear. Place in a bowl and cover with about 1 cup water. Soak for 4–6 hours at room temperature (or at least 2–3 hours if pressed for time) until the dal becomes plump.

Grind to a smooth batter

Drain the soaked dal. Transfer to a wet grinder or a high-speed blender. Add 3 tablespoons cold water in small increments and grind to a smooth, light, and fluffy paste. Pause and scrape sides as needed. The batter should be thick but pipeable — like a thick whipped cream. This can take 10–15 minutes in a wet grinder; a blender may take less but work in short pulses to incorporate air.

Whip the batter

Transfer the ground dal to a wide bowl. Using the back of a spoon or a whisk, beat the batter vigorously for 5–7 minutes to incorporate air; you should notice it becoming lighter and slightly frothy. This aeration is essential for soft, airy vadas.

Season the batter

Add 1 teaspoon salt and a pinch of baking soda (optional) to the whipped batter and fold gently to combine. Do not overmix after adding baking soda.

Fold in 2 tablespoons freshly grated coconut (if using), 1 teaspoon finely chopped green chilies, 1 tablespoon finely chopped curry leaves, 2 tablespoons finely chopped onion (optional), and 1 teaspoon crushed black pepper (optional). Mix gently so that the batter keeps its airy texture. Let the batter rest for 10–15 minutes to allow flavors to meld and any tiny bubbles to settle.

Heat the oil

Pour about 1 cup vegetable oil into a small deep pan or skillet to a depth of about 1 inch. Heat over medium heat until hot but not smoking; a small dollop of batter should sizzle and come up slowly when tested. Maintain medium heat so vadas cook through without browning too fast.

Shape the vadas

Wet your hands with 2 tablespoons water. Take a golf-ball-sized portion of batter (about 3–4 tablespoons) and shape into a smooth ball. Using your thumb, make a hole through the center to form a doughnut shape (traditional medhu vada). Alternatively, flatten slightly in your palm with a hole in the center. Keep hands wet to prevent sticking. Make 2 vadas.

Fry the vadas

Carefully slide one or two shaped vadas into the hot oil (do not overcrowd). Reduce heat to medium-low. Fry, turning occasionally, until golden brown and cooked through, about 3–4 minutes per side (total 6–8 minutes) depending on size and oil temperature. Internal texture should be soft and airy, not raw. Use a slotted spoon to transfer to paper towels to drain excess oil. Repeat with remaining batter.

Serve

Serve hot as soon as possible. Traditional accompaniments: coconut chutney, sambar, or a spiced chutney. Medhu vadas are best enjoyed fresh and crisp on the outside, soft and airy inside.
