Method
Dosa Batter (prepare ahead, 10–12 hours including fermentation)
Rinse rice (both types) and urad dal separately until water runs clear. Soak rice and parboiled rice together with poha and fenugreek seeds in about 500 ml water for 4–6 hours. Soak urad dal in 150–200 ml water for 4–6 hours.
Drain urad dal and grind in a wet grinder or high-speed blender with a little of the reserved urad soaking water to a smooth, light, and fluffy paste (add only as much water as needed). Transfer to a large bowl.
Grind the rice + parboiled rice + poha + fenugreek with reserved water to a slightly gritty but smooth batter (not as fluffy as urad). Combine both batters in the large bowl, mix thoroughly with clean hand or spoon, and adjust consistency with water to a thick pancake-batter consistency (should coat the ladle). Add 1 tsp salt and mix.
Cover and ferment in a warm place for 8–12 hours until doubled and slightly sour. After fermentation, gently stir batter; if too thick, add water to reach pouring consistency for dosas (approx 700 ml total water used during grinding was a guide). Reserve 2 cups of fermented batter for idlis as directed below.
Potato Masala Filling
Add finely chopped green chilies, ginger, and curry leaves. Sauté for 20–30 seconds until fragrant.
Add chopped onion and sauté till translucent (2–3 minutes).
Stir in turmeric powder and red chili powder briefly (10 seconds). Add the mashed potatoes and mix well to coat with spices. Season with 1 tsp salt. Cook for 2–3 minutes, breaking any lumps and mixing so potatoes absorb flavors.
Turn off heat. Stir in chopped cilantro and lemon juice. Taste and adjust salt. Keep warm.
Mini Dosas — Assembly & Cooking (makes ~12 mini dosas)
Stir the fermented dosa batter; if too thick for spreading, add a tablespoon of water at a time to reach a pourable consistency. Ladle about 2 tbs batter for each mini dosa (or use a ladle sized to make ~8–10 cm rounds).
Pour the batter into the center of the skillet and quickly spread with the back of the ladle into a 3–4 inch circle (mini dosa). Drizzle a few drops of oil or ghee around the edges and on top.
Cook on medium heat until the underside is golden and crisp at the edges (about 1–2 minutes). Cover with a lid for 20–30 seconds if you prefer them softer; for crisp dosa, cook uncovered.
Place about 1–2 tbs of warm potato masala on each dosa, fold or roll gently. Remove to a plate. Repeat with remaining batter and filling. Keep dosas warm in a low oven (100°C / 210°F) if making ahead.
Mini Idlis (8 pieces) — Steaming
Preheat idli steamer or large pot with a steamer rack and about 2 cups water; bring to a rolling simmer.
If using fermented batter reserved for idlis, stir it gently and adjust with up to 50 ml water so it has a spoonable but not runny consistency. Add 1/4 tsp salt if needed. Grease mini idli molds with 1 tsp oil.
Spoon batter into 8 mini idli cavities, filling about 90% to allow expansion.
Let idlis rest 1 minute, then remove from mold using a spoon. Serve warm with chutney and sambar.
South Indian Filter Coffee (decoction style quick method)
Bring 500 ml water to a boil. Add 4 tsp coarse coffee grounds in a small metal tea strainer or improvised filter bag and simmer in the water for 3–4 minutes to make a strong decoction. Alternatively, use a stovetop espresso maker or filter coffee maker to produce 80–100 ml strong decoction and reserve remaining hot water.
Pour about 60–80 ml of the strong coffee decoction into two cups (30–40 ml each) and add 120–150 ml hot milk to each (or mix proportions to taste). For traditional froth, pour between two metal tumblers from a height a few times.
Serve hot coffee immediately alongside dosas and idlis.
