Lassi Base
Add the cold water and ice cubes to the whisked yogurt. Cold water helps achieve the traditional refreshing texture.
Blend or whisk the yogurt mixture for 45–60 seconds until frothy and smooth. If using a blender, pulse on medium-high; if using a hand whisk, whisk vigorously to develop a frothy top.
Seasoning & Flavoring (Savory Desi Lassi)
Add 1 tsp salt, 1 tsp roasted cumin powder, and 1 tsp dry mango powder (amchur) or the juice of 1/2 lemon to the blended base. These are the core savory flavors of a desi lassi.
If desired, add 1/2 tsp sugar or jaggery to round the flavors, and 2 tbsp finely chopped fresh mint for freshness. Add 1/2 deseeded finely chopped green chili for a slight heat, and 1/4 tsp freshly ground black pepper if using.
Garnish
Pour the lassi into chilled glasses, leaving a little headroom for froth.
Sprinkle a pinch (about 1/4 tsp) of roasted cumin powder and a small pinch of chaat masala over the froth. Garnish each glass with a few mint leaves.
Serve immediately while cold and frothy. Stir gently before drinking if the garnish has settled.
