    Prepare oven and dough

    Preheat oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating. Stretch or roll the pizza dough into a 12-inch round on a lightly floured surface. Transfer to a pizza peel or baking sheet lined with parchment. Brush the dough edge lightly with 1 tablespoon olive oil.

    If you want to minimize sogginess from the teriyaki sauce, mix 1 tsp cornstarch with 1 tsp cold water and brush sparingly on the center of the dough before adding toppings. This step is optional.

Teriyaki Chicken

    Make teriyaki sauce

    In a small saucepan over medium heat combine 3 tbsp soy sauce, 2 tbsp mirin, 2 tbsp brown sugar, 2 tbsp water, 1 tsp grated ginger and 1 tsp minced garlic. Stir and bring to a gentle simmer.

    If you prefer a thicker glaze, whisk 1 tsp cornstarch into 1 tsp cold water and add to the simmering sauce. Cook for 1–2 minutes until slightly thickened. Remove from heat and set aside, reserving about 2 tablespoons of sauce for brushing the finished pizza.

    Cook chicken

    Slice the 12 oz chicken breast into 1/4-inch strips or bite-sized pieces. Heat 1 tbsp vegetable oil in a skillet over medium-high heat. Add chicken pieces in a single layer, cook 3–4 minutes per side until golden and cooked through (internal temperature 165°F / 74°C). Pour the teriyaki sauce over the chicken in the pan and toss to coat, cooking 1 more minute so the glaze clings to the pieces. Remove from heat.

Toppings

    Evenly spread a thin layer (about 3–4 tbsp) of the remaining teriyaki sauce over the prepared pizza dough, leaving a 1/2-inch border for the crust.

    Scatter the thinly sliced sweet onion evenly over the sauced dough.

    Distribute the glazed teriyaki chicken pieces over the onions in an even layer.

    Sprinkle 1.5 cups shredded mozzarella evenly over the pizza, covering the toppings but not packing tightly.

    Bake

    Slide the pizza onto the preheated stone or place the baking sheet in the oven. Bake 10–12 minutes, or until the crust is golden and cheese is bubbly and slightly browned.

    Remove the pizza from the oven. Brush the crust lightly with the reserved 2 tbsp teriyaki sauce if desired for extra gloss and flavor.

    Garnish with 2 tbsp thinly sliced green onions and 1 tsp toasted sesame seeds. Let rest 2–3 minutes, slice, and serve.
