Pound and season
Pat the chicken breasts dry. If any breasts are very thick, butterfly or place between plastic wrap and pound to an even thickness about 1/2 inch. Season both sides with 1 tsp salt, 1/2 tsp pepper, and 1 tsp garlic powder (reserve remaining salt/pepper for dredging).

Prepare dredging stations
Set out three shallow bowls/plates: one with the all-purpose flour, one with the eggs beaten with 3 tbsp milk, and one with the breadcrumbs mixed with 1/2 cup grated Parmesan, 1 tsp dried oregano, 1/2 tsp salt and 1/2 tsp pepper.

Dredge the chicken
Working one at a time, coat each breast in flour (shake off excess), dip into the egg mixture, then press firmly into the breadcrumb mixture so it is evenly coated. Transfer to a plate and repeat with remaining breasts.

Shallow fry
Heat a large skillet over medium-high heat and add about 4–6 tbsp olive oil (enough to coat the pan). When oil shimmers, add the breaded cutlets (do not overcrowd; cook in batches if needed). Fry 2–3 minutes per side until golden brown and crisp. Transfer to a wire rack or paper towels to drain.

Preheat oven
Preheat oven to 400°F (200°C). Lightly grease a baking sheet or line with parchment.

Assemble for baking
Place the fried chicken cutlets on the prepared baking sheet. Spoon about 1/2 cup marinara sauce over each cutlet, spreading slightly. Divide the shredded mozzarella evenly over the sauced cutlets, then sprinkle the 1/4 cup grated Parmesan on top.

Bake
Bake in the preheated oven 8–10 minutes, until cheese is melted and bubbly and the internal temperature of chicken reaches 165°F (74°C). For a lightly browned top, broil 1–2 minutes, watching carefully.

Finish
Remove from oven and let rest 2 minutes. Top each cutlet with torn fresh basil leaves, chopped parsley, and a pinch of red pepper flakes if using.
Assembly & Serve as Subs/Wraps

Build the subs/wraps
Place one baked chicken Parmesan cutlet into each roll or centered on each wrap. Spoon any extra warm marinara from the baking sheet over the chicken and add additional shredded mozzarella if desired. For subs: fold and serve immediately. For wraps: fold sides in and roll tightly, cut in half if desired.

Garnish and serve
Sprinkle chopped parsley and more grated Parmesan over the assembled subs/wraps. Serve hot with extra marinara on the side for dipping.
