Preheat oven and prepare surface
Preheat your oven to 475°F (245°C). If using a pizza stone, place it on the middle rack before preheating. Lightly dust a pizza peel or baking sheet with the all-purpose flour to prevent sticking.

Shape dough
On a lightly floured surface, stretch or roll the prepared pizza dough into a 12-inch round (about 10–12 oz dough ball) to your desired thickness. Transfer the shaped dough to the prepared pizza peel or baking sheet. Brush the dough lightly with 1 tablespoon olive oil, especially the outer rim, to promote browning.

Season and sauce the chicken
In a medium bowl, combine the shredded roasted chicken with 1/3 cup of the barbecue sauce, 1/4 tsp black pepper, and 1/2 tsp kosher salt. Toss gently until the chicken is evenly coated.

Assemble toppings
Spread the remaining 5/12 cup (approximately 0.42 cup) of barbecue sauce evenly over the dough, leaving a 1/2-inch border for the crust. Sprinkle half of the mozzarella and half of the Cheddar evenly over the sauce as a base layer. Distribute the BBQ-coated chicken across the pizza in an even layer. Scatter the thinly sliced red onion over the chicken. Top with the remaining mozzarella and Cheddar cheese.

Add spice and herbs
Lightly sprinkle 1/4 teaspoon red pepper flakes over the top (adjust to taste).

Bake
Slide the assembled pizza onto the preheated pizza stone or place the baking sheet in the oven. Bake at 475°F (245°C) for 10–14 minutes, or until the crust is golden-brown and the cheese is bubbly and starting to brown. Rotate the pizza halfway through baking for even color.

Rest and finish
Remove the pizza from the oven and let it rest on a cutting board for 2–3 minutes. Drizzle the optional extra BBQ sauce over the top in a thin zig-zag if desired, sprinkle the chopped fresh cilantro, and grate the optional Parmesan over the pizza. Slice into 8 slices and serve hot.
