Feta Vinaigrette

In a small bowl or jar, combine the crumbled feta, olive oil, red wine vinegar, lemon juice, Dijon mustard, honey, minced garlic, salt, and black pepper.

Using a fork, small whisk, or immersion blender, mash and blend the mixture until it forms a creamy, slightly chunky vinaigrette. If too thick, add up to 1 tablespoon cold water to loosen to a pourable consistency.

Taste and adjust: add a pinch more salt, a squeeze more lemon, or a drizzle more honey to balance tang and saltiness. Reserve at room temperature while preparing the sandwich.

Sandwich Assembly

Toast the sourdough: lightly butter one side of each slice (or brush with olive oil). Heat a skillet over medium heat and toast the bread, buttered side down, until golden brown and crisp, about 2–3 minutes per side (or use a toaster and then quickly sear in a dry skillet for 30–45 seconds for extra crunch).

Prepare vegetables: while the bread toasts, thinly slice the cucumber, red onion, and tomato. If you prefer milder onion flavor, place the red onion slices in a small bowl with 1 teaspoon of red wine vinegar or cold water for 5 minutes, then drain.

Layer the sandwich: place one slice of toasted sourdough, toasted-side up. Spread about half of the feta vinaigrette evenly over the slice (reserve the rest for topping). Arrange cucumber slices in an even layer, then top with tomato slices, scatter the halved kalamata olives, and add the thin red onion slices.

Add greens: pile the arugula on top of the vegetables. Spoon the remaining feta vinaigrette over the arugula (about 1–2 tablespoons) so leaves are lightly dressed. If using, sprinkle the lemon zest over the top for brightness.

Finish and serve: place the second slice of toasted sourdough on top, press gently, and cut the sandwich in half. Finish with a crack of extra black pepper. Serve immediately so the bread stays crisp and the arugula remains fresh.

Optional Garnish / Serving Notes

To serve the Salad-style 'Sophisticated Slop' open-faced: toast one slice, assemble as above, and serve with the extra slice on the side. Leftover vinaigrette keeps refrigerated in a sealed jar for up to 4 days.
