Jerk Garlic Sauce

Make the sauce

In a small bowl whisk together mayonnaise (1/2 cup), Greek yogurt (2 tbsp), jerk seasoning (1 tsp), minced garlic (1 clove), hot sauce (1 tsp), lime juice (1 tsp), honey (1/2 tsp), salt (1/4 tsp) and black pepper (1/8 tsp) until smooth. Taste and adjust heat or seasoning as needed. Refrigerate while assembling sandwich to allow flavors to meld (at least 10 minutes).

Prepare bread

Preheat oven to 375°F (190°C) or heat a pan/griddle over medium. Split the baguette lengthwise, leaving a hinge if you prefer, and remove any excess interior crumb to make room for fillings. Lightly spread softened butter (1 tbsp) on the cut exterior faces of the baguette for toasting.

Assemble fillings

Spread a generous tablespoon of the prepared jerk garlic sauce onto the bottom half of the baguette. Pile 1 cup warm pulled pork evenly across the bottom half. Layer 4 slices of deli ham on top of the pork, then arrange 3 slices of Swiss cheese over the ham so cheese overlays both ham and pork. Place 6 slices of spicy garlic pickles on top of the cheese (or between cheese layers if you prefer more pickle contact with meat). If using, add 1 tsp yellow mustard thinly spread on the top half of the baguette.

Toast and press (optional)

Close the sandwich and wrap it in aluminum foil if you want a pressed effect. Place on a baking sheet and bake in the preheated oven for 8–10 minutes, until cheese is melted and bread is toasted. Alternatively, heat in a skillet or panini press over medium heat, pressing down occasionally, about 4–6 minutes per side until cheese melts and crust is crisp. If not pressing, simply toast open-faced under the broiler for 2–4 minutes, watching closely.

Finish and serve

Remove from oven/pan and let rest 1–2 minutes. Unwrap (if used), slice into portions (2–3 servings depending on appetite), and serve immediately with extra jerK garlic sauce on the side and additional pickles if desired.

For a touch of extra tang, add extra pickle slices or serve with a small drizzle of mustard alongside the sandwich.
