Prepare the Skirt Steak

Pat the Angus skirt steak dry with paper towels. Season both sides generously with salt and black pepper.

Cook the Steak

Heat olive oil in a skillet over medium-high heat. Once hot, add the skirt steak and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness.

Rest the Steak

Remove the steak from the skillet and let it rest for about 5-10 minutes to allow the juices to redistribute.

Prepare the Black Garlic

While the steak is resting, finely chop the black garlic cloves.

Prepare the Bunching Onions

Slice the bunching onions thinly, using both the white and green parts.

Serve

Slice the rested skirt steak against the grain, and serve topped with black garlic, a generous spoonful of romesco sauce, and garnished with sliced bunching onions.
