Wings
Prepare wings
If wings are whole, separate into drumettes and flats by cutting at the joint; discard or save tips for stock. Pat wings very dry with paper towels to ensure crisping.
In a large bowl, combine kosher salt, black pepper and baking powder. Toss the wings in the mixture until evenly coated. Baking powder helps dry the skin and promotes crispness.
Two cooking options: Frying or Oven (choose one). - Frying: Heat 3–4 cups neutral oil in a deep pot to 350°F (175°C). Fry wings in batches 6–8 minutes until golden brown and internal temp reaches 165°F (74°C). Drain on a wire rack over a sheet pan. - Oven: Preheat oven to 425°F (218°C). Place wings on a wire rack set over a rimmed baking sheet lined with foil. Roast 40–45 minutes, flipping once at 25 minutes, until skin is deep golden and crisp and internal temp 165°F (74°C).
If serving Plain: toss hot wings with melted butter (optional) for a light sheen and seasoning. Keep wings warm while you make sauces.
Buffalo Sauce
In a small saucepan over low heat, melt butter. Add hot sauce, honey, apple cider vinegar, Worcestershire and garlic powder. Whisk until combined and warmed through, 1–2 minutes. Remove from heat. Toss hot wings in sauce until evenly coated (about 8–10 wings per 1/2 cup sauce).
Gold Fever Sauce (mustard-honey)
Whisk Dijon mustard, honey, mayonnaise, apple cider vinegar and smoked paprika in a bowl until smooth. Adjust honey or vinegar to taste for sweetness/acidity. Warm briefly if you prefer it warm (optional). Toss wings gently in 2–3 tbs sauce per 3 wings or serve sauce on side.
Honey Sriracha Sauce
Whisk together sriracha, honey, soy sauce and lime juice until glossy. Taste for balance and adjust heat or sweetness. Warm 15–20 seconds in microwave if desired. Toss wings in sauce to coat or serve on side.
Dipping Sauces
Place blue cheese, ranch and red sauce in small ramekins. Serve alongside wings so guests can choose. Chill dressings until serving if prepared earlier.
