Keep beer chilled at 38–45°F (3–7°C) for lagers and 45–55°F (7–13°C) for ales if separate refrigeration is available. Rotate stock on a first-in, first-out (FIFO) basis to ensure freshness. Store cans and bottles upright to minimize oxidation.

Store and rotate

Place bottles or cans in an ice bucket filled with a 3:1 mixture of ice and cold water for 10–15 minutes to rapidly chill. For single-service cans kept at room temperature, chill in refrigeration for at least 2 hours before serving.

Chill quickly when needed

Open bottles with a bottle opener and serve in a clean beer glass or pint glass. For canned beers, open at the counter and pour into a glass if the guest prefers; otherwise hand the can to the guest. Pour at a 45° angle, straighten to create 1/2–1 inch of head (foam) for aroma release.

Opening and serving beer

Treat non-alcoholic beers the same as alcoholic offerings for chilling and presentation. Label and store separately to avoid confusion.

Non-alcoholic beer

Store unopened wine bottles lying on their side in a cool, dark place at 50–59°F (10–15°C) if possible, or upright if short-term. Single-serve canned wine can be refrigerated upright. Keep sparkling wine chilled in refrigeration or ice bucket.

Storage

White and rosé: chill to 45–55°F (7–13°C) — refrigerate for 2–3 hours or 20–30 minutes in an ice bucket. Red: serve slightly below room temperature at 60–65°F (15–18°C) — remove from refrigeration 20–30 minutes before serving if too cold. Sparkling: chill to 38–45°F (3–7°C) in an ice bucket for 20–30 minutes.

Chilling times

Use a corkscrew to remove corks cleanly. Wipe the bottle lip with a napkin. For sparkling wine, remove the foil and wire cage while holding the cork; twist the bottle (not the cork) slowly to ease out the cork with controlled pressure to avoid spillage.

Opening bottles

Pour wine into appropriate glasses: red in larger-bowled glasses, white/rosé in smaller-bowled glasses, sparkling into flutes. Fill red glasses about one-third full, white/rosé about one-quarter to one-third, sparkling to one-third to preserve bubbles. Offer to taste if guest requests and serve the remainder if approved.

Pouring

Recork opened bottles or use a wine stopper and refrigerate whites/rosés/sparkling; store reds upright in a cool place. Consume opened wines within 3–5 days (whites/rosés/sparkling shorter) to maintain quality.

Opened bottle care

Ensure glassware is clean and free of detergent residue or odors. Chill glasses slightly for beer and sparkling wine if desired by placing them in refrigeration for 10–15 minutes or briefly in the freezer (no longer than 10 minutes).

Set out napkins and a clean service area at the front counter. Keep corkscrew, bottle opener, spare stoppers, and ice buckets accessible behind the counter.

When a guest selects a bottle to take away, offer an ice bucket and napkin for transport if the bottle is chilled. For on-premise consumption, use a coaster and present the bottle or can neatly alongside the poured glass.

Maintain accurate inventory tracking: record bottle/can sales daily, note popular stock items, and reorder local craft selections regularly to keep variety and freshness.
