Method

Chocolate Mousse

Prepare Gelatin

Soak the gelatin sheets in cold water for about 5-10 minutes until softened. Drain and set aside.

Melt Chocolate

In a heatproof bowl, melt the dark chocolate over a double boiler or in the microwave until smooth. Allow to cool slightly.

Whip Cream

In a separate bowl, whip the heavy cream to soft peaks and set aside in the fridge.

Mix Egg Yolks

In a saucepan, whisk together the egg yolks and sugar. Cook over low heat, stirring constantly until the mixture is pale and slightly thickened.

Combine Ingredients

Remove from heat and add the melted chocolate and softened gelatin to the egg mixture, stirring to combine.

Fold in Cream

Gently fold the whipped cream into the chocolate mixture until fully combined. Pour into molds and refrigerate for at least 4 hours to set.

Coconut Caramel

Prepare Caramel

In a saucepan, combine sugar and water. Cook over medium heat without stirring until the mixture turns a golden brown color.

Add Coconut Milk

Once caramelized, carefully add the coconut milk and stir until smooth.

Finish with Butter

Remove from heat and stir in butter until melted and fully incorporated. Let cool before using.

Prep Oven

Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.

In a bowl, sift together the all-purpose flour, cocoa powder, and sugar.

In a separate bowl, whip the egg whites until stiff peaks form.

Combine Mixtures

Gently fold the dry ingredients into the egg whites, then fold in melted butter until just combined.

Bake Biscuit

Spread the batter evenly onto the prepared baking tray and bake for about 15-20 minutes. Let cool before cutting into rounds.

Toasted Coconut Sorbet

Blend Ingredients

In a blender, combine coconut milk, sugar, toasted coconut flakes, and lime juice. Blend until smooth.

Transfer the mixture to a bowl and refrigerate for about 30 minutes.

Churn Sorbet

Churn in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency. Freeze until firm.
