Preparation of Quinoa

Rinse and Cook Quinoa
Rinse 1 cup of quinoa under cold water to remove any bitterness. In a medium saucepan, combine the rinsed quinoa with 2 cups of water. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes or until the quinoa is fluffy and the water is absorbed. Remove from heat and let it sit for 5 minutes before fluffing with a fork.

Heat Black Beans
Open the can of black beans, drain, and rinse them under cold water to reduce sodium content. In a small saucepan, heat the black beans over medium heat for about 5 minutes until warmed through. Season with salt and pepper to taste.

Chop the Vegetables
While the quinoa is cooking, dice the avocado, halve the cherry tomatoes, chop the cilantro, and finely chop the red onion. Set aside.

Prepare Lime
Cut the lime in half and set aside for squeezing over the bowl.
Assembly of the Bowl

Assemble Ingredients
In a large bowl, add a serving of cooked quinoa as the base. Top with warmed black beans, diced avocado, halved cherry tomatoes, chopped cilantro, and red onion. Drizzle with olive oil and sprinkle cumin over the top. Squeeze lime juice to taste and add salt and pepper as desired.
