    In a non-stick skillet, heat 1 tablespoon of butter or oil over medium heat. Crack the eggs into the skillet and season with salt and pepper. Cook to your desired doneness, about 2-3 minutes for sunny-side up or 3-4 minutes for over-easy.

Potatoes

    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. In a bowl, toss the diced potatoes with olive oil, garlic powder, paprika, and salt until evenly coated.

    Cook the Potatoes

    In a large skillet, heat over medium-high heat. Add the seasoned potatoes and cook, stirring occasionally, until golden and crispy, about 15-20 minutes.

Bacon

    Cook the Bacon

    In a separate skillet, cook the bacon slices over medium heat until crispy, about 5-7 minutes. Remove from skillet and place on paper towels to drain excess grease.

Toast

    Toast the Bread

    In the same skillet used for the bacon, add the sourdough slices and toast on each side until golden brown, about 2-3 minutes per side. Spread butter on the toast while warm.
