Activate Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Make Dough
In a large mixing bowl, combine the flour and salt. Pour in the yeast mixture and stir until a dough forms.

Knead Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour.

Shape Pretzel Bites
Preheat your oven to 425°F (220°C). Divide the dough into equal pieces and roll each piece into a rope. Cut into bite-sized pieces.

Boil in Baking Soda Solution
In a large pot, bring 10 cups of water to a boil and add the baking soda. Boil each pretzel bite for about 30 seconds, then remove and place on a parchment-lined baking sheet.

In a medium saucepan over medium heat, combine the cheddar cheese, cream cheese, and milk.

Stir continuously until the cheeses are melted and the mixture is smooth. Add in the garlic powder, paprika, and adjust salt to taste.
